Lonely Chicago Pie

So quiet now that Nancy and Kevan returned back to Maryland.. I miss them already. Finally got myself to Starbucks so that I can get connected again. Been without internet since Tuesday after my "provider" kicked me off along with a smart little hacked up message he left on my laptop saying "Way too long buddy!"

Watched the "Waitress" this morning and thought the movie was realistically refreshing especially since I felt a personal attachment to what Jenna goes through, lost but don't want to be found nor saved. Have not made my escape yet but hopefully soon in 09, been long enough. Not sure why some of us choose to build these self inflicted jails and spend years in punishment of self-denial. Women especially, we're odd in so many ways!

BTW- here's how to make "Lonely Chicago Pie" for kicks.

Cinnamon, spices and sugar underneath rich melted chocolate and smashed berries.

Ingredients:
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 tbsp tapioca flour
  • 1 tbsp ground cinnamon
  • 1 egg, beaten
  • 2 tbsp melted, salted butter
  • 1 tsp vanilla extract
  • 1 1/2 cups 1% milk
  • 1 (9 or 10 inch) unbaked deep-dish pie crust
  • 1/2 cup fresh strawberries or blackberries, lightly crushed
  • 3/4 cup semisweet chocolate chips
  • 1 tsp salted butter
Directions
  1. Preheat oven to 400F.
  2. In a large bowl, combine the sugar, tapioca flour, cinnamon and salt. Add the beaten egg, butter, and vanilla. Mix well and add the milk.
  3. Pour mixture into crust.
  4. Bake for 15 minutes, then reduce heat to 350F and bake 40 minutes.
  5. Top pie evenly with crushed berries, return to oven and bake 10 minutes longer.
  6. Let cool completely on rack.
  7. Melt together chocolate chips and 1 tsp butter, pour thoroughly over baked pie. Allow to chill in fridge before serving.
